Roasting turkey is very easy and delicious!  All you do is rub the turkey with the herbs, pop it in the oven and dinner is ready in about an hour. I like to roast a whole turkey breast for dinner and use the leftovers for sandwiches and snacks all week. This is a healthier, better tasting and more economical alternative than going to the deli.
Ingredients
  • 1 (6 lb.) bone in turkey breast, skin removed
  • 2 Tbs. olive oil
  • 4 garlic cloves, crushed
  • 2 tsp. finely chopped fresh sage
  • 2 tsp. finely chopped fresh thyme
  • 2 tsp. finely chopped fresh rosemary
  • 1 tsp. salt
  • 1/2 tsp. freshly ground black pepper
Directions
Preheat the oven to 375.  Rinse the turkey breast and pat dry.  In a small bowl, combine the oil, garlic, herbs, salt and pepper and rub over the turkey breast.  Transfer the turkey breast to a roasting pan and roast until the juices run clear when cut and a thermometer registers 165 (about 1 to 1 1/4 hours).  Let rest, covered with aluminum foil, for 10 minutes before carving. Your diabetes recipiesare ready!
**Chefs note: if you can’t buy fresh herbs, you can substitute dried instead.  Just use half of what you’d use fresh.
